Colts' Kitchen Caters Homecoming

            This week in Colts' Kitchen the chefs are catering a Mexican dinner at the Homecoming dance.
      
            Throughout the week the chefs will be prepping for Friday evening. We will be serving pulled pork tacos with a guacamole sauce, jicama salad and arroz con leche (rice pudding.)
      
            To prepare the pork we will brine the pork in a mix of Mexican seasonings to penetrate flavor inside the meat as well as add moisture. We will then sear the meat to caramelize the outside for even deeper flavor. After the searing we will braise the pork for several hours; low and slow as Chef Stef says.
      
            As for the salad we will make a flavorful dressing and "marinate" the salad for enhanced flavor. Lastly we will cook the rice pudding and bring it all together on Friday Evening.
                                            This dinner will be a feast for the taste buds!
